I like to have quinoa at least once a week, it’s good for us and it is better for us than pasta or rice. This week I made a Greek Quinoa Salad. At least that’s what I am calling it 😉 I found a recipe similar to this in a magazine and I made a few tweaks and I really like it! I would definitely make it again! Quick, healthy, easy and filling can’t go wrong!
Greek Quinoa Salad Recipe

Ingredients
- 1 cup quinoa
- cherry tomatoes
- olive oil
- basil leaves
- Feta Cheese
Instructions
- Bring 2 cups liquid to a boil, and 1 cup quinoa, cover, and simmer 15 to 20 minutes. The yield will be about 3 cups.
- For an easy salad, toss with sauteed cherry tomatoes, (I used 1 small container but since they are 0 points and power food add to your liking),
- olive oil,
- basil leaves,
- Low fat Feta instead
- That"s it!
