I posted this Easy Black Bean & Corn Salsa recipe over on my other site too, but since it’s filled with Weight Watcher Power Foods, super easy to make, and is absolutely delicious – I thought you guys would like it too. Don’t forget about how to keep your cilantro fresh…because if you buy one bunch and don’t use it all on this recipe…you might as well keep it fresh for when you make it again next week 😉
- 1 can of black beans - rinsed
- 2 limes - juiced
- 1 can of tomatoes and green chiles
- ¼ cup chopped Cilantro
- ¼ cup diced Green Onion
- 1 can of Corn
- 1 teaspoon of Cumin
- Mix all the ingredients together and enjoy with your favorite chips of on top of any delicious meal!
This salsa is good on chips, cucumbers, carrots, or even on top of chicken, fish, etc! It’s full of flavor! make sure to let us know if you try this Black Bean & Corn Salsa…it’s actually one both my mom and I enjoy regularly!
